Vegan Chily Cheese Fries
The History behind the Fries
Have you ever had a food for the first time while doing something special or making a great memory? Then every in the future when you eat that food it brings you back to that time, that feeling, that memory that you made back when you first had it. Chilly cheese fries is a memory food for me.
When I was in high school I lived in Las Vegas. Every year for my birthday I would go to an all day music festival called Extream Thing. One year, I remember sitting in the grass with the music from the main stage playing while I was staring up at the blue skies.
My two friends and I just got done dancing our hearts out to whoever just played. We were sweaty, out of breath, full of excitement and must of all hungry. My two friends wanted chilly cheese fries. I had never had them before, but I was hungry enough to eat pretty much anything. So I wasn't being too picky. So all three of us pitched in for some chilly cheese fries. They ran off to grab them and I stayed behind to bask in the sun.
When they came back, they were giggling. In their hands was what looked to be a pile of slop and they were trying their hardest not to spill it. I don't know if it was because I was starving or if it was as good as I remember it to be, but it was so delicious. Maybe it was the food mixed with not only a memory but the excitement of the day that made them so good. Now every time I think of chili cheese fries I can't help but smile.
So I may not be able to go back to that day, sitting in the grass while munching on chili cheese fries with my friends. However, I can get it pretty darn close to being as delicious as I remember that day at the festival.
Time to get Baked
- 2 cans of Vegan/Vegetarian (Or homemade Chilly)
- A Squirt Ketchup
- 3-8 drops of hot sauce (we normally use Jim bean but if you're feeling something spicier don't let me stop you.)
- Dash of cumin
- Dash of Garlic powder
- Dash of Onion powder
- Cheese Sauce
- Bag of frozen or homemade fries
- Preheat oven for you french fries.
- Bake your fries.
- About 10 minutes before your fries are done start your chilly.
- Add ketchup, hot sauce, cumin, garlic powder, and onion powder. Then mix.
- Allow for chili to come to a slow simmer stirring occasionally.
- Layer fries on a plate and then top with chili and cheese.
**After awhile of scooping and dumping cheese in big globes all over the fries I came up with a great idea. I got one of those food squirt bottles. This way it makes it so much easier for me to squirt my cheese all over my fries.
