Spaghetti with Vodka sauce
The History behind the spaghetti
Spaghetti and I have a love/hate relationship. Like I said in my Deep Dish Post, I have never been the biggest fan of marinara sauce. My mom would make traditional spaghetti and I would eat it, but only because I had to. Finally, when I got a little bit older I told my mom that it was not my favorite dinner in the world.
Being the awesome mom she is, next time she made spaghetti she decided to use alfredo sauce and I loved it. Alfredo has a much better flavor in my opinion. I really like the creaminess it has. It made family pasta night much more enjoyable.
Then one day I came home from school and my mom made pasta with sun dried tomato sauce, I liked that much better than marinara sauce. However, it was still very similar to marinara sauce so I still preferred alfredo over sundried. Until my mom mixed the two together; this was where it was at. I love how easily my mind can be blown when it comes to food. What can I say? I'm a foodie.
The sauce was closer to a traditional marinara sauce but with the creaminess of an alfredo sauce. So then, every spaghetti night, my mom would mix together both sauces and I was obsessed. Paired with some garlic bread and you have a great dinner.
Once I went vegan I stopped eating pasta as frequently because alfredo is not really easy to find vegan. You can make really great vegan alfredo but it takes some time. For me, spaghetti is a quick and easy dinner to make after work; something tasty but still fast. Even though I wish I could spend all day cooking in my kitchen, I am an adult so I don't always have the time to. (One day I will but not right now.) So it was something I just stopped making.
Until a couple of weeks ago, that is. I was watching my favorite YouTubers and they were vlogging about making dinner. They had spaghetti with vodka sauce. At the time I didn't know much about vodka sauce. All I knew was that anytime I saw it in stores, it was not vegan. The YouTubers I happened to be watching are vegan too, so It made me perk up and start doing some research. Why haven't I looked into vodka sauce sooner, it is so easy! It's the perfect sauce to make for a yummy and simple dinner. It reminds me a lot of the sundried tomato and alfredo mixture I used to eat.
Time to Get Baked
- Penne pasta (you can use traditional spaghetti noodles but my boyfriend doesn't like them so we use different noodles)
- Marinara sauce
- 2 large scoops of Vegan cream cheese
- 1 package of Vegan beef crumbles
- 1 tbsp Italian seasoning
- 1 tsp crushed red peppers
- Salt and pepper
- Boil a large pot of water and cook pasta according to the package.
- In a small saucepan combined your marinara sauce, vegan cream cheese, Italian seasoning, crushed red peppers, salt, and pepper. stir occasionally to make sure the cream cheese melts and mixes.
- In a frying pan cook up your vegan beef crumbles.
- Once the pasta is done drain.
- Combined the sauce with the vegan meat.
- Then serve and enjoy.
**Top with some vegan Parmesan if you like to, I used go veggie vegan parmesan**
